Human Nutrition Bio28

Course Description

You will be introduced to the basic concepts of human nutrition in this course. Topics covered will include the different classes of nutrients, how food is a source of these nutrients and how our bodies use them. You will learn how to make healthy food choices, how to read nutrition labels and assess your personal diets. We will discuss the meaning of a healthy diet and how our nutrient needs change with age.

You will learn the importance of  human nutrition in maintaining good health and cover topics that include antioxidants, phytochemicals, sugar, food additives, supplements and food safety.  We will discuss the role of  nutrition in the prevention of diseases like obesity, heart disease and hypertension.  Other topics you will learn about are the importance of exercise for health and the role of nutrition in exercise performance. Cultural influences on diets, vegetarian diets and various fad diets will be explored. We will also discuss how our food is being produced and the importance of food sustainability to our health and environment.

Fall 2011 students:

I teach a Late Start Nutrition Course that begins on Mon, Aug 29th. Classes are on Mon and Wed, from 9 am to 10.45 am in B202.
